Twin G Ranches was founded on a simple but powerful belief: great food starts with
quality ingredients and a deep respect for the land, the animals, and the people being
served.
Founders John and Shelly Gilbert are no strangers to excellence in food and hospitality.
With more than 35 years of experience managing restaurants and high-profile catered
events across Texas, John has led G Texas Catering & Events to become one of the
premier catering, bar, and restaurant groups in the Dallas–Fort Worth market.
After 24 years in business, G Texas now serves more than 600,000 guests annually at
some of North Texas’ most iconic venues, including the Dallas Museum of Art, Gilley’s
Dallas, and the AT&T Performing Arts Center.
From the Kitchen to the Ranch: Why Twin G Ranches Was Created
John and his culinary team at G Texas Catering proudly serve Premium Texas Angus
and Wagyu beef across their three Dallas restaurant concepts and at hundreds of catered
events throughout North Texas. Known for creating custom menus tailored to each
client, G Texas specializes in everything from elegant seated dinners to casual, chef-
driven buffets—all built around fresh, locally sourced ingredients.
One ingredient consistently stood above the rest: Texas Beef.
However, sourcing High Choice and Prime beef cuts with reliable tenderness and flavor
became increasingly difficult in today’s market. Much of the beef available through retail
and wholesale channels is sourced outside the U.S., often with loosely regulated breeding
and feeding practices.
That challenge sparked an idea.
To ensure consistent quality and maintain full transparency from pasture to plate, John
and Shelly founded Twin G Ranches—allowing them to take a hands-on role in
producing the beef they proudly serve to their guests.

Twin G Ranches produces Certified Texas Beef that is available to customers throughout
the Dallas–Fort Worth area, as well as to the restaurant and catering partners who
feature Twin G products on their menus.

ranches, including the Gilberts’ own property in Waxahachie, Texas.
